In the winery, late-ripening and/or late-ripening grapes continue to be vinified in October. Racking, racking and clarification are carried out as appropriate. During the fermentation phase, the drop in the sugar level is checked every day and racking is carried out at the desired level. If fermentation slows down or stops, it is necessary to intervene immediately with aeration and, if necessary, the addition of selected yeasts.
In the field, autumn fertilisation begins at the end of the harvest.
