Produced from only Arneis grapes at an altitude of 300 metres, on sandy, well-exposed soils, it is harvested at the end of September.
Its vinification is carried out by destemming, maceration in the press for 8 hours in an inert environment and subsequent soft pressing. It ferments in second-passage French oak barriques and matures on the noble lees with frequent manual bâtonnage.
Refinement is partly in wood (16 months) and partly in bottle (minimum 18/24 months in bottles lying down).
This Roero Riserva has a beautiful intense straw colour and a rich and complex nose. It expresses itself with aromas of citrus, white pepper, aromatic herbs and a delicate note of dried apricot. On the palate, this wine appears soft and powerful, with a vigorous acidity, but leaves a rich taste in the mouth, ideally integrating the mineral notes.
A very elegant wine but at the same time particularly full and deep, to be served at 16 °C.
Suitable for elaborate fish dishes, mature cheeses, first courses such as stuffed egg pasta, lasagne with meat sauce, aubergine parmigiana.
Production only takes place in exceptional years and in variable numbers.
