Harvested by hand at the beginning of October, it is vinified through soft destemming, followed by fermentation in stainless steel with selected yeasts at a controlled temperature and 15 days of maceration on the skins with frequent pumping over. It is first aged for 14-16 months in French oak barriques and then for 12 months in bottles lying down. There is no continuity in production, as only exceptional vintages are made and production is therefore variable.

wine pairing 61

Barbera d'Alba Superiore "Mario Costa" is the highest expression of our Barbera grapes. A superiority that comes immediately to the nose and palate.

Above all, this wine has a much longer shelf life and ageing potential.
Mario Costa is produced in the Roero, a hilly area near the town of Alba. It is an aged Barbera and - as time goes by - becomes fuller and more balanced. Sometimes with notes of wood in the aftertaste.

Barbera has strong tannins, yet never too aggressive. So it shows a lean body and incredible acidity even though it grows in relatively warm areas.

In conclusion, the strong point of our Barbera, even in the "Superiore" key, remains its extraordinary drinkability. You can drink this wine as an accompaniment to important dishes based on farmed meat or game as well as in combination with classic Piedmontese hors d'oeuvres. For example vitello tonnato rather than salami.
In short, by opting for a Barbera as full-bodied as the "Mario Costa", you can accompany the most elaborate dishes with sure success; from risotto with truffles to game or a tartare of Fassona with truffles. Prosit!
