In November, the work in the cellar is focused on the first operations of wine conservation. New wine is clarified, if necessary, new wine is decanted into barrels or barriques and wine analyses are carried out. Then the equipment used for harvesting and vinification has to be put away: washed, disinfected and protected from dust.
